Fresh Homemade Pumpkin Bread

For the past two years we have grown pie pumpkins in our garden.  Last year we made Pumpkin Pie Filling for the first time as a homeschooling project.  It was a lot of fun and very satisfying to use our pumpkins as something beneficial instead of just as decorations. The difference in taste from canned pumpkin was wonderful.   Please check out the process on the link above.  This year we again made our own pie filling.  Of course you can use this pumpkin pulp in any recipe that calls for canned pumpkin.  If you want to make your own pulp use the "pie pumpkins" which are smaller than the jack-o-lantern pumpkins and are much tastier.  Yesterday I used a wonderful recipe to make pumpkin bread.  It was very most and delicious.  I'll be making this for Thanksgiving this year.    Here is the recipe:

Mix together:
3 cups of sugar
4 eggs
1 can pumpkin or 2 cups fresh pumpkin 
1/2 cup veg. oil
1/2 cup melted butter
add
2 1/2 cups flour
1 tsp. baking powder
2 tsp. baking soda 
1 tsp. cinnamon
1 tsp. ground cloves
1 tsp. nutmeg
Mix all ingredients together well.
Grease and flour 2 loaf pans
Bake at 350 for 45-50 minutes
Let cool 10 minutes before removing from pans.
